Position Description and Responsibilities

Under direction of the Food Services Program Manager, manages all phases of the facility's food service program; directs food production; plans, schedules and publishes menus; supervises subordinates in preparation of modified diets and menus; completes and signs requisitions for food supply and product needs; enforces disciplinary, safety, sanitary, and custodial measures.

35% Supervises staff.

25% Provides input into food production by directing and initialting maintenance of proper health, sanitation and safety standards in preparing, serving and storing foods.

20% Plans, schedules and publishes menus for general therapeutic diets.

10% Directs and monitors staff in training offenders in food preparation.

05% Serves as Food Services Program Manger in his/her absence.

05% Performs other duties as required or assigned which are reasonably within the scope of the duties enumerated above.

Minimum Requirements

  1. Requires knowledge, skill and mental development equivalent to completion of four years of high school.
  2. Requires three years of institution food preparation experience such as could be gained as a Corrections Food Service Supervisor I or II or supervisory experience in a large-scale food service operation.
  3. Requires completion of an orientation training course within six months of employment.
  4. Requires extensive knowledge of institutional rules and regulations and requirements for the control of offenders.
  5. Requires extensive knowledge of large-scale food service procedures and practices.
  6. Requires extensive knowledge or preparing, serving and acquiring food on a large-scale basis.
  7. Requires working knowledge of health and safety requirements to a large-scale food service.
  8. Requries ability to instruct and supervise subordinates and offenders or juveniles working in all important food service functions.
  9. Requires ability to keep food service records, conduct inventories, prepare reports and requisition food and other supplies.
  10. Requires ability to inspect food supplies and to judge quality and condition.
  11. Requires ability to direct the proper use of machinery, equipment and facilities used on the food service.
  12. Requires ability to enforce disciplinary, safety, security and custodial measures at all times.

Conditions of Employment

  1. Requires possession of a current Food Service Sanitation Certificate issued by the Illinois Department of Public Health or requires possession of a Certified Food Protection Manager (CFPM) certification from a program accredited by the American National Standards Institute (ANSI) Conference for Food Protection (CFP).
  2. Requires the ability to pass the IDOC/IDJJ background check.
  3. On January 1, 2020, the Cannabis Regulation and Tax Act made it legal for residents over the age of 21 to produce, consume and sell cannabis in Illinois. Please note that although the law has changed, the Department will continue to enforce the Department s zero tolerance Drug Testing policy. The use of unauthorized drugs, including cannabis, by an employee, regardless of the position held is prohibited.
